28 easy meals for last-minute get-togethers

We’ve all been there: You’re looking forward to a nice, relaxing evening of doing nothing but kicking your shoes off, pouring a glass of wine, whipping up a light summer salad, and zoning out while watching TV. Then, your bestie calls and says it’s time for a last-minute get-together. You’re totally caught off-guard, but you don’t want to say “no,” either. What do you do? Do you even have ingredients in the kitchen to make anything worthwhile? No worries. We have a list of super-easy go-to recipes for whenever this happens. Scroll through, see what suits your fancy, and then get that apron on.

First: Pick your category. Are your guests into beef, chicken, pork, seafood, vegetarian, or vegan? Scroll through our categories and see what sounds good.

Second: Do you have all the ingredients you need? Is there anybody who can stop at the store for you? If you need more items but don’t want to run out or send someone on an errand, get on the internet and order what you need from Instacart. You can change into fresh clothes and start prepping what you do have while you wait, which is much better than wasting precious time at the store!

Instant Pot meals

If you’re lucky enough to have an Instant Pot during a time like this, you can really save time and make something great. We’ve found our easiest dish is a quick veggie pasta, which can easily be topped with freshly grated parmesan cheese or even meatballs if you have the time and ingredients.

Note: for most Instant Pot recipes (not all, just most — read each one carefully, please), the cook time given does not include the 10 minutes it takes for the Instant Pot to build pressure or the up to 10 minutes it takes to naturally pressure-release (if that is recommended) after cooking. That can mean an extra 20 minutes of cook time, depending on your Instant Pot and the recipe.
